How we cook:

All our meats are SMOKED & GRILLED — never boiled or steamed. We use NATURAL SMOKE from aged hickory chips, with a DRY RUB recipe from the owner's Memphis-born great-grandmother. We create BONE-DEEP FLAVOR by vacuum-tumbling, then slow-cook the meat in a rotisserie self-basting smoker. All our sauces and side dishes are HOMEMADE, all from family recipes.
